Tasting Notes:
Glowing ruby in color, a prominent, aromatic nose projects sweet strawberry compote. Full bodied and luscious in the mouth with flavors of sweet red fruit preserves and orange peel. Beautifully balanced and harmonious with a finish that rings.
Production Notes:
In September 2007, a block of premium Cabernet Franc was covered with netting to prevent predation by birds and deer. Following Canadian VQA conventions, 9 tons of vine frozen grapes were hand-harvested in four days between January 20 and February 16, 2008. Each harvest was immediately transported to the winery and pressed while frozen. The total 960 gallons of juice averaged 39 Brix, 3.8 g/L Ta, and 3.60 pH and represented about 60% of a normal yield. The wine was fermented cool over 2.5 months. On April 8, 2008 chilling at 12.5% alc. and 19.3% residual sugar stopped fermentation.
